Sheet Pan Fried Rice

Dinner for people who think cooking isn’t a wok in the park.

Ingredients

  • 2 cups uncooked rice
  • 2 eggs
  • 1/4 cup of oil (canola, sesame, etc.)
  • 1/2 cup soy sauce
  • 1 onion
  • 1 green pepper
  • 8-16 ounce bag of frozen mixed vegetables
  • 2 cloves of garlic

Directions

  1. Cook rice per directions on package
  2. Chop all ingredients to a consistent size
  3. In a bowl combine all ingredients except for eggs
  4. Bake in a 400 degree oven for 20 minutes, stirring halfway through
  5. Add eggs to mixture, mix again, cook for another 5 minutes

Step by Step Directions

Cook your rice by whatever means best suit you. If you have instant rice you can make in the microwave then do so. If you have a rice cooker than by all means put it to use. If you make it in a pot with water it will turn out alright. Whatever allows you to be able to eat it.

Next, you can either refrigerate it or use it immediately, the goal is to remove some of the liquid and make it “drier” so it fries easier. Water and oil are not the best of friends.

Chop up all your vegetables. Ideally we want all the pieces to be a consistent size so they cook along with the rice evenly.

A tip for making this easier would be to make sure your knife is sharp, you shouldn’t have to force the knife through your vegetables with your body weight. If your knives are sharp then I promise that your chopping speed will increase and cooking will become a lot easier.

Throw everything into a bowl except the eggs (you could skip the bowl if you want and just do this on your sheet pan). You should mix everything together until your soy sauce and oil are evenly coating everything. If the rice isn’t quite as dark as you want feel free to add some more soy sauce until it’s the color you want.

Spread your mixture evenly on a pan. The less height of your rice mixture the faster and more evenly everything will cook (and you might not drop the food on the floor). Make sure your oven is at 400 degrees and bake it for 20 minutes, taking it out and stirring at the halfway mark.

Add your eggs. You can either whisk them ahead of time or throw them on top and then mix them into your food, whisking means a more even coating but it also gets another bowl dirty, completely up to you.

Bake for an additional five minutes.

If the rice isn’t as done as you would like you can keep it in the oven for longer, but otherwise that’s it.

Variations

  • Add a protein: chicken, pork, beef, whatever you want
  • Include/Exclude any other vegetables, I didn’t realize the bag of veggies I grabbed had green beans, but I wasn’t upset
  • Cook the rice for longer in the oven, you know how crispy you like it
  • Garnish with some green onion, it’s alright to be fancy if you want
