Cyp’s Pork

No lie: I’ve had several people tell me this is the best thing they’ve ever eaten (they may not have been 100% sober, but still).

Ingredients

  • 1 pound pork
  • 3-4 cloves garlic
  • 1 white onion
  • 2-3 tablespoons canola oil
  • 1 1/2 tablespoon cumin
  • 1 1/2 tablespoon salt
  • 1/4 cup flour
  • A shit ton of salsa (2+ cups)

Directions

  1. Slice pork into small pieces (bite sized), finely dice an onion and your garlic
  2. Barely cover the bottom of a pan with your oil, turn the heat on high
  3. Add your pork, allow it to sear and create a crust
  4. Add your onion
  5. Once onion is softened then add your garlic
  6. Add your flour, turn down heat and stir so meat is coated
  7. Create a well in the middle of the meat and add your salsa
  8. Mix well, scraping the bottom of the pan until ready to serve

Step by Step Directions

Cut up your pork into small pieces. The original recipe I got said they should be 1/8 inch by 1/3 inch. I usually just try to aim for bite size or smaller. You may think it’s tedious but I like to give this recipe the respect it deserves. **Also, don’t trim the fat, that’s your flavor.

Dice an onion and some garlic finely, the pieces of onion should be at least half the size of the pieces of meat and the garlic should just be tiny.

Barely cover the bottom of a pan in oil and turn the heat up high.

I was taught to do this in a thick bottomed pan, but if you don’t have one available it will still turn out.

Add your meat to the pan. You want to let it sit undisturbed for a moment. The goal is to create a nice flavorful crust on the meat as it cooks in the oil. Try not to stir it too much (you still want to cook the entire thing though).

Nearing the end of your searing add your salt and cumin to the pan and mix it in.

Add your onion to the mixture once the meat is cooked. If you’re doing it right then some of the meat should be sticking to the bottom of your pan and you’ll have to use a little bit of force to get the onions mixed in.

Once your onions have softened add in your garlic. It should be smelling pretty good in your kitchen right about now.

Your meat, garlic and onion should now be combined. You should be scraping the bottom of the pan and meeting some resistance, at this point all the meat should be cooked through.

Add your flour to your mixture and turn down the heat. Your goal is to have the flour thicken up the pork and onion juice and make it so that your food starts to meld together.

**Note: Don’t measure your flour over the pan you’re cooking in, you might accidentally get too much in the pan.

Next create a well in your pan and add a lot of salsa. I don’t know if you heard me, a lot. Nope. More than that. The picture you’re about to see? Not enough, even more. Then mix that all together.

Continue cooking your meal on low for a little bit longer, scraping the bottom of the pan as you go. Your mixture should feel like a combined meal when you’re stirring. When you’re ready then the food is ready too.

In my family we like to have this on a tostada. To do the same all you have to do is fry some tortillas (or buy the ones from the store) and then pile it high with any or all of the following:

  • Refried beans (this will help the meat stick to the tortilla)
  • Salsa
  • Guacamole
  • Sour cream
  • Pico de gallo
  • Shredded lettuce
  • Cheese

Variations
