Chocolate Cobbler

Ingredients

Base

  • 1/2 cup (1 stick butter)
  • 1 cup sugar
  • 1/4 cup cocoa powder
  • 2 cups flour
  • 1 tablespoon baking powder
  • Pinch of salt
  • 2 teaspoon vanilla extract
  • 1 cup milk

Topping

  • 1 1/2 cup sugar
  • 1/2 cup cocoa powder
  • 3 cup water

Directions

  1. Preheat oven to 350 degrees and throw stick of butter in 9×13 baking dish and throw in warming oven
  2. Begin boiling 3 cups of water
  3. In a bowl combine your cup of sugar, quarter cup of cocoa powder, flour, baking powder, salt, vanilla and milk, mix until combined
  4. In a separate bowl mix your remaining sugar and cocoa powder until uniform
  5. Remove melted butter from oven and using the mixture from the first bowl cover the bottom of the baking dish with everything in bowl
  6. Using the second mixture completely cover the top of the first mixture with cocoa powder and sugar
  7. Pour the boiling water over the mixture – do not mix, just let the water sit in the mixture
  8. Bake for 35 minutes

Step By Step Directions

Start warming your oven up to 350 degrees. You can either melt your butter in the microwave or place it in the warming oven. Either way you’ll want to have the bottom of the pan completely covered with melted butter.

At this time you’ll also want to start boiling your water on the stove. By the time you’ve done everything else it should be boiling and ready to go.

Next you’ll want to make two bowls. One will have your base and will have the cup of sugar, the quarter cup of cocoa powder, the flour, milk, vanilla, salt and baking powder. The second will have the half cup of cocoa powder and the remaining sugar.

Mix the two bowls together. The first should form a fairly thick base, the second should remain as a powder that is completely the color of the cocoa powder.

Remove your baking dish from the oven and spoon your thick mixture into it. You’ll want to cover the base of the dish with the mixture so that you can’t see the bottom. It’s likely some of the butter will get mixed in (this isn’t necessarily a bad thing).

Spoon your cocoa powder/sugar mixture on top (don’t mix it), you should be able to cover the entirety of the base with your second mixture.

Now slowly pour in your boiling water to your layered mixture. You don’t want to mix anything after you’ve added the water, the water evaporating will do all the work.

Bake for 35 minutes. You should have a crust form on the top, with a semi solid chocolate base underneath. I would recommend letting it cool/solidify just a little bit before serving but you might not be able to help yourself.

Variations

  • Serve with ice cream/whipped cream
  • Place chocolate chips on top of the mixture during the last couple minutes of baking
  • Use heavy cream instead of regular milk and get something more similar to a mousse
