Cake in a Cup

Because sometimes you’re the only person who deserves a treat

Ingredients

  • 1/2 Tablespoon (1/16 stick) of butter
  • 3 Tablespoons of milk
  • Vanilla extract (measure with your heart)
  • 1/4 c. flour
  • 1/2 teaspoon of baking powder
  • 2 teaspoons sugar (granulated or brown)

Equipment

  • Microwave
  • Microwave safe mug or cup

Directions

  1. Melt butter in microwave
  2. Add remainder of ingredients, mix until smooth
  3. Microwave for 1 minute

Step By Step Directions

Put your butter in your microwave safe cup/mug (this is very important, you don’t want to be picking up shards of whatever from inside your microwave, or starting a fire if there’s metal inside it).

Microwaves vary, but I’ve found 30 seconds to a minute should work to melt the butter depending on how cold it was to start.

Add all your ingredients and then start mixing them. Cake batter should ideally be smooth, and the more air you incorporate into the mixture the fluffier it will be.

This might not be the easiest thing to do if you’re trying to limit dishes (like I was) and use the knife you used to cut the butter.

Now that everything is mixed you can (and probably should) add some mix-ins. You can go nuts here, add whatever you want, this is a treat for one so only add what you want.

If you feel that your dough isn’t wet enough feel free to add a little more milk until it gets to the consistency that you want.

Throw your mixture in the microwave. 60 seconds should work on most microwaves, but they’re all different, so if need be then just throw it back in for a couple more seconds until it’s baked how you want.

Variations

  • Add some cocoa powder and make it a chocolate cake
  • Add whatever filling you want: fruit, chocolate chips, sprinkles
  • Add some frosting
